This recipe is super simple and quick to cook! Ideal for those who want a fast snack that is also tasty as f! You will only need 4 ingredients for this one and it won’t take you too long. The best meal for the moments you arrive home after a very tiring, busy day. Don’t forget to wash your potatoes before starting preparing them! Baking: 30-45 min.
Serves 2 people (Depends on how hungry you are)

You can add some parmesan cheese and some rosemary, for more deliciousness!

Ingredients:

  • 12 potatoes small on skin
  • Extra Virgin Olive Oil (generous amount)
  • 2 Lemons
  • Salt and Pepper

Preparing:

  • Put the washed potatoes in a saucepan of salted water
  • Wait until the water boils
  • Turn heat down and let potatoes simmer for about 15–20 minutes (Potatoes have to be undercooked)
  • Drain the potatoes and arrange them on a baking tray
  • Use the bottom of a clean glass to smash the potatoes 
  • Coat the potatoes with a generous amount of olive oil, salt, and pepper
  • Bake in preheated oven - 45 minutes at 180C or until golden crispy
  • Squeeze both lemons on the potatoes when they finish baking

Ridiculously simple, right? Delicious, easy, and also vegan! Who said you have to spend hours in the kitchen to have a tasty meal? 4-Ingredients only, baby!
