This Creamy Tomato Courgetti recipe is a perfect option for your chilly evenings. It’s soooo simple, healthy, and very comforting and takes less than 15 minutes to make. In fact, it can be eaten as a side but we also recommend having it for dinner as well.

And if you are not so keen on courgetti, you can use spaghetti instead of corgetti. To make it more filling, you can add some grilled chicken or feta cheese for instance.

(You can always add some grated parmesan cheese on top for more deliciousness)

Ingredients:

  • 4 slices of parma ham
  • ½ small pack basil
  • 350g tomato and mascarpone sauce
  • 250g pack courgetti
(Attention: Kosher salt and Black pepper, for seasoning)

Preparing:

  • Tear the ham and basil roughly
  • Heat a frying pan over medium heat
  • Dry-fry the ham until crisp
  • Transfer to a plate with a slotted spoon
  • Add the sauce to the pan and cook for 1-2 mins,
  • Toss the courgetti in
  • Cook for 1 min more until warmed through
  • Serve it by dividing it between bowls
  • Top with the ham and basil
  • Enjoy!
