How about making a little Christmas treat for your cozy, sweet holiday season without having to spend all day in the kitchen? These mini Gingerbread Cheesecakes are so deliciously easy to make and, believe you me, to make these little pieces of heaven, you’ll only need 4 ingredients!

These are otherworldly good and so tasty, the perfect snack for Christmas munchies! So, take 20 minutes of your day, prepare your kitchen and let’s start making this awesome recipe!

4 ingredients gingerbread
You can always add some chocolate chips on top, we’re not gonna judge you…

Ingredients:

  • 30 oz package of Pillsbury Gingerbread Cookie Dough
  • 4 oz cream cheese, room temperature
  • 2 cups powdered sugar
  • 1 teaspoon vanilla

Obs: Save a dozen or so pieces of chocolate to push into the cookies!

Instructions:

  • Roll two teaspoons of cookie dough into a ball for each cookie
  • Place balls of dough into paper liners mini cupcake/muffin pan
  • Make a well/indentation into each dough ball with a flour-dipped mini rolling pin or the back of a measurement teaspoon.
  • Beat room-temperature cream cheese with powdered sugar.
  • Stir in vanilla.
  • Place filling into a piping bag, and cut off the edge of the bag.
  • Place one teaspoon or so of filling into each area of cookie dough.
  • Bake at 350 degrees for 9 minutes (or until cookie tested with a toothpick comes out almost clean)
  • Attention: don’t overfill the cookies with filling as they will rise when baked.
  • Let cool before removing it from the cupcake pan.
  • Enjoy your Gingerbread Mini Cheesecakes!
